Re:Official Topic: Sciences-Brewing - 2006/01/16 16:21 my guess (and its really jsut an educated guess) would be bacterial contamination. you may not have steralized something well enough, or you may have not had an airtight system.

now, it could have been the tap water. but i would assume that was boiled before use? if so, it isn't very likely. but if you didn't boil the water for a while first, it oculd have been where the bacteria came from.

As I'm reviewing my journal I realized I only boiled half the water I used. I always leave half the water cold because it lessens the time it takes to cool the wort to yeast pitching temp. That has to be where I made my mistake but I'm unsure then why I still got the vigorus offgassing from the primary fermenter. If the tap water was the source of the bacterial contamination then wouldn't it have killed off the yeast before it began converting the sugars? ~shrug~ Well, I guess it's just try again and use the distilled water this time. Batch should be ready about in time for Rakis then.

Re:Official Topic: Sciences-Brewing - 2006/06/05 21:41 I remember hearing about both the beer and cider in question...brewing is more an art than a science for quite a few reasons. The whole frementaion thing (aka yeast eating sugar -- turning it into booze thing) is very basic, but with so many twists and vairables to it...that is what makes it an art versis a science.

Don't get me wrong...I feel that it takes quite a bit of science to suceed in the art of brewing. And one needs to be careful with their ingreadents, to be certain.

Yoto...is there a way that I could also get a copy of that Good Eats?

Another thing to check in to with having such a set up is legality. Federal regulations on home brewing is pretty liberal, but some states are very strict on what can be brewed per year. Had a run in once in the past like that.

I really doubt that it is the tap water that you used. I have been brewing for over ten years now and never use distilled water. You might have some issues with metals or treatments used in the water that could be an issue....or have water that is like what I get out here in the county (every now and again we get warnings from the water supplier of over treatment or high bacterial levels....last year we even got a warning not to allow children to drinkthe water for a few weeks till it mellowed out). Even with that I have never had issues with the water being used when I brew.
I would guess that you had some cross contamination from something else and with bacteria you will get some offgasing as well....but you would still expect a bit of alcohol content.

Any chance your hydrometer is bad?

Btw, Katheryne - Colorado follows the federal guidelines which allows for a rediculously high amount of beer or wine to be made annually.
