Mead - 2007/07/10 22:14Inspired by Edan -- but not in the way he might have hoped -- Professor and I have brewed up our first batch of mead. The powerhouse combination of my culinary flair and his lab-monkey skills have yielded a clover honey wine flavored with orange peel and ginger. Alas that tasters will not be ready by Donutstock, but we have high hopes for the future. We'll keep ya posted. I'd post pictures but Professor lost the cable.Nimue "Everything in excess! If any of you all buy wine by the gallon, you could save the bottle for me to use. After all, most of your finer wines come in jugs...well, you can always make sangria, anyway. Re:Mead - 2007/07/20 05:27The first batch of mead is currently at 8%. It stopped fermenting a couple days ago. We hypothesize that it needs more nutrition, so I pureed an apple and added it. It seemed like a good idea because it already tastes sort of like cider. Prof declares that he would drink it as is; I wouldn't, yet, anyway. So we have high hopes that it will turn into a nice, cider-like drink with about 10% ABV.
We started a second batch today with some badass wildflower honey, oranges, cinnamon, cloves, and a dash of nutmeg. If all goes well, it should be a nice spicy-sweet drink with 14% ABV (which is the level that is lethal to the yeast) in about two months.
Since this is an Amtgard project, we've used only "historical" recipes, meaning that they don't use any manufactured chemicals as ingredients. It's been fun.

so yes. i start with bacardi silver, and then add a heavily infused bar syrup. so technically its a rum cordial i think. but cordials are usually 20-30 proof... Rewth Rum stays around 60-70 proof (1/2 cup of flavoring in a pint bottle of 80 proof rum).
its actually extremely easy to make a batch. takes me less than 30 minutes now that i've done it a few dozen times. but then it needsto sit i nthe fridge for a week for hte flavors to meld and more of the spice to come out (i usually leave a few pieces of cinnamon/cloves/whatever) in the bottle to keep working.
becuase of all the sugar. it becomes VERY smooth and easy to drink regardless of alchohol content. much like "Happy Juice".
i've made about a dozen different flavors at this point: Cinnamon Clove Vanilla (Cloven Hoof, my favorite) Apple Cinnamon (Apple of Kallisti, second favorite) Pineapple Coconut (Island Spirits) Pomegranate Blueberry (Pandora's Bane) Orange Vanilla (Dreamsickle) etc etc etc...
some are better than others. havn't had good luck at all with anything Blue or Red. they always end up tasting like cough syrup to me.
At Donut Stock i should have some Apple Cinnamon, Cinnamon Clove, Orange Clove, and the Espresso one. dunno how the orange is gonna turn out either. but i'll try to make sure you get a sample of all of em. they tend to go pretty quickly though."But right now I'm a little concerned about my pants, since I don't know where they are." - Valathina Nailo

Re:Mead - 2007/07/24 02:14just tasted it. i shall call it "Liquid Morning" it is amazingly coffee flavored. to an extent this is good, i guess. i've never personally been a coffee fan, but my wife thinks its "good". she's always been a fan of extremely descriptive terms.
its her birthday so i'll let it slide.
