Stuffin - 2006/11/23 15:12just gotta share this in honor of turkey day.
its 8am and i just threw together the stuffing i'm gonna have tonight for "national kill a turkey and eat it" day. it happens to be gluten free, but isn't required. won't taste any differnet one way or the other.
if got no idea what exact measurements i used. i don't cook that way. cope.
8x8 pan of corn bread (i used GF flour and cornmeal, 1 egg, water, oil)
cut or break it up into 1inch chunks. put it in a big bowl and leave it out over night to dry out and get kinda stale.
the next morning fry up half a package of mild italian sausage, dump it in the bowl.
while yer doing this, make 2/3 cup (measured dry) of wild rice, using chicken stock in place of the water. when its done, dump it in the bowl too.
in the drippings, saute 1 red onion, 1 stalk of celery, 1 apple, and a handful of mushrooms (all diced) til they are nice n soft. add a few tbsp of butter, salt pepper, some rosemary and sage. melt the butter and dump it all in the bowl too.
mix everythign up all nice, breaking hte cornbread up further into bitesize pieces. adjust moisture level with most chicken stock, but do not over do it.
cover with foil and pop in the oven for 20 minutes at oh... lets say 425...

I feel for ya Rewth. I've been a vegetarian for...hmm, let me think...just about a DECADE now and some of my family still thinks it's a phase. And let me tell you, Texans have a hard time with the whole issue. My aunt thinks bacon-wrapped asparagus is a veg dish because you can unwrap the bacon off of it. And my in-laws think vegetarian cooking sucks because they think that all I eat is steamed broccoli and plain white rice. I think they honestly don't know what I eat. Of course, they consider chicken a vegetable.

Re:Stuffin - 2006/11/24 02:30you could easily make that stuffing without sausage, but it does add a particularly good flavor to it... i'm fairly certain wholefoods has a tofu based sausage that would work just fine. but no... no egg. i've never used egg in my stuffing, i like it to be kinda crumbly and easily separated. egg in stuffing (particularly cornbread stuffing) is really a southern thing. and i also find that they put too much liquid in and it becomes mush. bleh.
we also took along asparagus with galic/tomatos all over em. and of course cheese covered broccoli. i love broci. and a blueberry pie thats been sitting in my fridge for a year (not GF so i can't eat it).
oh... and gravy. BAD ASS gravy. i fried up the rest ofthe italian sausage, and left the drippings in the pan, added some onions, celery, rosemary a vege bullion cube and a bunch of chikkin stock. cooked for a half hour, strained and thicken with corn starch. the sausage drippings really added a ton of kick to it, made it yummy beyond yummy.

Re:Stuffin - 2006/11/25 03:24if yer burning things you need to turn the heat down. high heat is used for boiling water, thats it. medium high heat isn't used for anything, its jsut for decoration.
it goes like this:
low heat: keeping things warm and light simmering med low heat: simmering and for things that burn easy (eggs, milk) med heat: everything else med high: nothing. decoration. high: boiling water.

i can actually maintain a boil at medium on my stove though. yer right in that its all subjective to the stove. and for that matter, subjective to the burner. T smacked our glass top stove with a large metal spoon one day (i was teasing her bout not wanting kids, she wanted kids. she won.) and it cracked. its actually a pretty nifty crack pattern. we haven't bothered to fix it. but ever since, our back left burner barely gets warm on low, you always have to jack it up a notch or two in comparison to the others."But right now I'm a little concerned about my pants, since I don't know where they are." - Valathina Nailo

I got a restuarant-quality 10" French chef's knife for Xmas. It's a beautiful thing to behold. My feeling is, if you're not sure whether or not you can commit a murder with your French chef's knife then you need a better one. Likewise your pans.
