"Finished" generally translates to "anything to slow or stop the fraying of the fabric," even if its just running a zig-zag down the outside of the seam. A finished seam will always last longer than an unfinished seam, but how long that is depends on your fabric. Trigger will fray slowly, satin will fray while you're sewing it (in fact, I generally double my seam allowance when working with satin, and trim down as necessary )
As for applique advice, I suggest what basically amounts to sewing a piece of paper to your piece. Slide the paper in on the bottom, sew over it, tear it off. The paper stiffens the applique, and will eventually wash out.
